Mango and mint coconut cooling drink

This mango and mint coconut cooling drink is light and hydrating, made with plenty of coconut water so it stays a refreshing drink, not a thick shake. Here is how to make it.

Ingredients

  • 1 cup mango, cubed
  • 2.5 to 3 cups coconut water or drinking water (your choice)
  • A small handful of fresh mint
  • Juice of 1 lime
  • Stevia, to taste (optional)
  • Ice, to serve
Method

  1. Blend the mango, mint and lime with most of the liquid until just combined and light and drinkable, not a shake.
  2. Loosen with more liquid if needed.
  3. Taste and add a little stevia only if you want it sweeter.
  4. Pour over ice and garnish with mint.

Tip: Plenty of coconut water keeps it light and drinkable rather than thick like a smoothie.

How do I keep it light, not a shake?

Use plenty of coconut water or water and just enough mango for flavour, then loosen further if it feels thick.

Coconut water or plain water?

Either works. Coconut water adds a gentle sweetness; plain water keeps it lighter.

No. Mango is naturally sweet, with a little stevia only if you want it sweeter.
