Mango, mint and coconut ice lollies

These mango, mint and coconut ice lollies are light and fruity, made with more liquid than mango so they stay smooth and pourable, never a thick puree. Here is how to make them.

Ingredients

  • 1 cup mango, cubed
  • 1.5 cups coconut water or drinking water (your choice)
  • A small handful of fresh mint, finely chopped
  • Juice of 1 lime
  • Stevia, to taste
  • A few tiny fruit pieces for the moulds
Method

  1. Blend the mango, liquid, lime and mint until smooth and pourable, light rather than a thick puree. Add more liquid if needed.
  2. Sweeten lightly with stevia.
  3. Drop a few tiny pieces into each silicone mould, pour in, and add sticks.
  4. Freeze at least 6 hours, then release under warm water.

Tip: Keep the mango modest and the liquid generous so the lollies stay light, not pasty.

Frequently asked questions

Why so much liquid?

More coconut water or water keeps the lollies light and smooth instead of a thick, pasty puree.

Coconut water or plain water?

Either works. Coconut water adds a gentle sweetness; plain water keeps them lighter.

Is there added sugar?

No. Mango is naturally sweet, with a little stevia only if you want it sweeter.
