These watermelon and mint ice lollies turn our watermelon cooler into a frozen treat, naturally sweet with just a little stevia, tiny fruit chunks set in, and an extra squeeze of lime. Here is how to make them.
- 3 cups watermelon, blended
- A small handful of fresh mint, finely chopped
- Juice of 1 to 2 limes (extra lime)
- Stevia, to taste
- Tiny chunks of watermelon or berries for the moulds
- Blend the watermelon, mint and lime. Sweeten with a little stevia, making it slightly sweeter than you would sip.
- Drop tiny fruit chunks into each silicone mould.
- Pour in the blend.
- Add sticks and freeze for at least 6 hours.
- Release under warm water and serve.
Tip: Strain the blend for smooth lollies, or leave it as is for a little texture. Taste and adjust the stevia and lime before freezing.

Is there any added sugar?
No. The watermelon is naturally sweet, with a little stevia if you want it sweeter.
Do I need special moulds?
Silicone popsicle moulds release most easily. Run them under warm water for a few seconds.
Can I add other fruit?
Yes, small chunks of berries or extra watermelon set in the moulds look lovely and add texture.
