This mango and mint coconut cooling drink is light and hydrating, made with plenty of coconut water so it stays a refreshing drink, not a thick shake. Here is how to make it.
- 1 cup mango, cubed
- 2.5 to 3 cups coconut water or drinking water (your choice)
- A small handful of fresh mint
- Juice of 1 lime
- Stevia, to taste (optional)
- Ice, to serve
- Blend the mango, mint and lime with most of the liquid until just combined and light and drinkable, not a shake.
- Loosen with more liquid if needed.
- Taste and add a little stevia only if you want it sweeter.
- Pour over ice and garnish with mint.
Tip: Plenty of coconut water keeps it light and drinkable rather than thick like a smoothie.
