Lychee & Mint Lemonade

Lychee, lime and stevia cooling drink

This lychee and mint lemonade is light, floral and zingy. The lychee is blended and strained for a smooth finish, then mixed with fresh lemon, mint and a little stevia. Here is how to make it.

Ingredients

  • 1.5 cups lychees, peeled and de-stoned (or canned, drained)
  • Juice of 2 lemons
  • A small handful of fresh mint
  • 2.5 to 3 cups cold water or coconut water (your choice)
  • Stevia, to taste
  • Ice, to serve
Method

  1. Blend the lychees with a little of the water until smooth, then strain through a fine sieve for a clean finish.
  2. Stir in the lemon juice, the rest of the water and a little stevia to taste.
  3. Add or lightly muddle the fresh mint.
  4. Pour over ice and serve.

Tip: Straining the lychee keeps the lemonade smooth. Use sparkling water in place of some of the still water for a fizzy version.

Why strain the lychee?

Lychee has fine fibres, so straining gives a smooth, clean lemonade rather than a pulpy one.

Can I make it fizzy?

Yes, swap some of the still water for sparkling water for a lychee and mint fizz.

Is there any added sugar?

No. The lychee is naturally sweet, with a little stevia only if you want it sweeter.
