These mint, lime and cucumber ice lollies are the frozen version of our cooling infused water, lightly sweetened with a little stevia, with tiny fruit chunks set in and an extra squeeze of lime. Here is how to make them.
- 1.5 cups cold water (or coconut water)
- Juice of 2 limes (extra lime)
- A handful of fresh mint, finely chopped
- Half a cucumber, very finely diced
- Stevia, to taste (start with a few drops)
- A few tiny fruit chunks (berries or extra cucumber) for the moulds
- Stir the water, lime juice, mint and stevia together. Make it slightly sweeter and limier than you would sip, since freezing dulls both.
- Drop a few tiny fruit chunks into each silicone mould.
- Pour in the liquid.
- Add sticks and freeze for at least 6 hours.
- Run the moulds under warm water for a few seconds to release.
Tip: Freezing mutes both sweetness and tang, so always taste and adjust the stevia and lime before you freeze.

Why use stevia?
It is a natural, no-added-sugar way to sweeten. Add it a little at a time to taste.
Do I need special moulds?
Silicone popsicle moulds release the most easily. Run them under warm water for a few seconds to pop the lollies out.
Can I make them without stevia?
Yes. The fruit chunks and lime carry plenty of flavour, so sweeten to your own preference or leave it out.
