These lychee, lime and stevia ice lollies are a delicate, floral summer treat. The lychee is blended and strained for a smooth finish, then lightly sweetened and frozen. Here is how to make them.
- 1.5 cups lychees, peeled and de-stoned (or canned, drained)
- 1 cup coconut water or drinking water (your choice)
- Juice of 1 to 2 limes
- Stevia, to taste
- A few tiny fruit pieces for the moulds
- Blend the lychees with the liquid and lime until smooth.
- Strain through a fine sieve for a clean, smooth texture.
- Sweeten with a little stevia, a touch sweeter and limier than you would sip, since freezing dulls both.
- Drop a few tiny pieces into each silicone mould, pour in, and add sticks.
- Freeze at least 6 hours, then release under warm water.
