Lychee, lime and stevia ice lollies

These lychee, lime and stevia ice lollies are a delicate, floral summer treat. The lychee is blended and strained for a smooth finish, then lightly sweetened and frozen. Here is how to make them.

Ingredients

  • 1.5 cups lychees, peeled and de-stoned (or canned, drained)
  • 1 cup coconut water or drinking water (your choice)
  • Juice of 1 to 2 limes
  • Stevia, to taste
  • A few tiny fruit pieces for the moulds
Method

  1. Blend the lychees with the liquid and lime until smooth.
  2. Strain through a fine sieve for a clean, smooth texture.
  3. Sweeten with a little stevia, a touch sweeter and limier than you would sip, since freezing dulls both.
  4. Drop a few tiny pieces into each silicone mould, pour in, and add sticks.
  5. Freeze at least 6 hours, then release under warm water.

Tip: Straining is the secret to smooth lychee lollies. Coconut water adds a gentle sweetness; plain water keeps them light.
